This lovely Friday I have a wonderful treat for you! 🙂
It has almost no sugar (heck, it has almost no carbohydrates!), no dairy, it’s completely natural and healthy – and it can really pass for a cake! With chocolate!
This has been my signature cake thingy for a couple of years now, and whenever my daughter’s kindergarten has an event, asking parents to bring cakes along, this is what I make. It feels so good to be able to provide a healthy natural foods alternative among the wheat and the sugar! This chocoberry pie is also a regular on the table when we’re having birthdays or other celebrations – or just when PMS takes over and I really REALLY need a treat.
I found it on Girl Gone Primal, but I’ve changed the recipe around a bit. Here is my version of it:
Preheat oven to around 220 celsius.
First you make the crust:
200 gram walnuts (or other unsalted nuts)
200 gram almonds
Ground the almonds and nuts, mix in the eggs, and knead into a pie or cake form (just remember to oil or butter it well before you do). Put it in the preheated oven while you make the fillings:
100 gram dark chocolate (as dark as you can get it)
100 gram butter
Melt in a kettle, and then, add
1 tablespoon honey
5 tablespoons of cacao powder
Now get your kitchen machine ready, and whip
until light and fluffy.
Then mix it lightly in with the melted chocolate mix.
Take the crust out of the oven, and pour
400 gram frozen berries
Then pour the chocolate/egg mix on top of them, and put back into the oven.
I really have no idea how long it should stay there, I just go by the hunch. There is nothing in it that needs to be cooked, really, as the crust is mostly done and it’s just a question of how firm and dry you want the pie. The top should be dry, but the rest… I’ve made it completely dry (best for transportation, as the berry juice may run), and I’ve made it nice and juicy. It’s up to you. 🙂
Oh, and for your information, 100 grams of this has about 180 calories, according to my food calculator, whereas 7.9 grams are carbohydrates (honey and added sugar), 1.8 grams are added sugar (from the chocolate I’m using), 4.8 grams protein (from the eggs) and 14.1 grams fat (from the nuts and the butter).
If you’re counting calories, this is clearly not something you should binge on. And if you’re counting carbs, you might try to sweeten the chocoberry pie with stevia instead of honey. But the good news is: it’s actually so nutritious and clean that you can have it for lunch! 😉
